Lets talk about cooking stuff....to eat

I've got some chicken drumsticks...but no propane for the barbecue, so I'm going to cook these mofos in the oven.  Here's my plan:

Marinade these mothers for, like, a day in a ziploc bag:

-Chilli Sauce
-Soy Sauce
-MAYBE salt...if I have any.  I hate buying salt.
-I don't think I have any honey, which makes a great glaze, but I do have honey garlic sauce, so I might throw this in.  Because I also really fucking hate buying honey
-Garlic
-ginger (maybe)

And then I plan to cover a tray in tin foil, put those on the tray and bake them for like an hour.

I think this sounds delicious, but am a bit skeptical of skipping out on the honey. Also, the ginger may just be me being an idiot and liking to throw shit into shit because I envision it being delicious instead of weird (also, if there's soy Imma probably going to think there should be ginger).

I will, however, accept any suggestions for alterations/other marinade ideas.   And yes, I'm posting this because cooking has gotten really boring lately.

Try adding in a spoonful of Black Bean Garlic sauce and a little but of sugar to give it some Asian flavour.

I just used some marinade on turkey breast the other night and it turned out great. The usual ziploc bag routine:

Balsamic vinegar
soy sauce
garlic olive oil
a little hot sauce
some water

Then later I used some Himalayan pink salt, ground black pepper, and honey on each side of the breast before cooking, along with a bit of the marinade in the pan, which you can end up using as a sauce after the meat has finished cooking. Served it with a side of green beans that I also cooked in a bit of the marinade, plus white rice.

Marinated turkey breast?  I've never even considered it for some stupid reason.  I'm IN!


As for crockpot, a slowcooker is basically the same idea, right?

Okay, I have a shitload of chicken breast because I don't know how to buy things in small amounts.   I made some sweet ass crispy chicken parmesian the other day, which has been serving me well at work for leftovers, but need ideas for what to do with the rest of this, besides barbecue it. 

Something pretty quick and easy would be dope - soup? Glaze it somehow?

We've gotten in the habit of roasting a whole chicken every couple weeks* so usually end up with leftover chicken for two to three nights. Figuring out what to do with it has become fun. A few dishes have served us well.

1) Curries. Just buy some red/yellow/green paste, add some coconut milk, and a few different veggies and you're good to go. Bonus points for adding some chicken broth/bouillon. For veggies we've tended to go with garbanzo beans, zucchini/other squashes, broccoli, green beans, or potatoes depending on the curry.

2) Pot pies. The dough might be a bit rough, but everything else is easy. Just cut up the chicken, gets some cream of chicken soup and add a frozen corn, green bean, carrot mix. Bonus points for celery if you want.

3) Tacos. Just throw it in a pan with some seasoning (you can get premade or figure out your own) and then throw it in corn tortillas with lettuce, cheese, and whatever else you want. If you want to make somewhat crispy tacos throw a little oil into a pan, heat, and then put the tortilla into there. With tongs you can form a shell shape pretty easily.

4) Chicken soup. Lightly saute some onions and garlic, add chicken broth, the chicken, celery and carrots (we tend to just use baby carrots). Get the veggies near cooked then add some egg noodles.

Then there's always the stir fries and such.

*By we, I mean Aimee. She's gotten pretty good at making good roast chicken.

Every good marinade should have some citrus thrown in. For the op, a little orange juice or pineapple juice would add something good I think. With a marinade, it can't really be *bad* unless you throw weird shit together or have your proportions completely out of whack. Now, if you want a good dry rub, I have a delicious one for steak.

I had some pork rib chops and never really cook pork so I didn't know what to do.  I ended up searing those mofos in a pan, spicing them up with some straight up salt and pepper as I did so.  On the last flip, I dropped some sugar  on each side, because fuck - why not?

Then I got some apples and cut them like a champ.  I took these apples, placed them on the bottom of a casserole , mixed some cinammon with some apple sauce, put the chops on the apples and doused them in the sauce. Baked for 20 min on 350, flipped, doused with more sauce, put some beer in there and covered the dish for the last 20 min.

Pretty delicious, although could have still used a bit more flavour.

So a weird kind of recipe for people to try if they want. We do a sort of sweet and sour meatball thing. The meatballs are just you know, normal. Ball up some meat and fry it in a pan. You could add chives or something to the meat if you like that sort of thing. Then the sauce is a mix of barbeque sauce (store bought or home made) and jelly, usually grape or raspberry. You just fudge the measurements, do half and half or whatever you feel like. Add it to the meatballs and let it simmer. Serve on rice.

BUMP FOR FOOD!

So mom bought these chicken tender things, and some boneless chicken thighs. Saving the thighs for tomorrow...not sure what I'll do yet. Thinking curry chicken or do some kind of asian BBQ thing.

Anyway, cooked up the tenders. They were small and long, like a chicken breast cut in half the long way. So I gave them a little pound to flatten/spread them a little and stuck em in a bag with some dill pickle juice for a half hour to an hour. This gave them a little extra flavor and kept them juicy.

Then we had some Italian bread crumbs. I was going to mix it from scratch with panko bread crumbs but we must have used that for something else. Whatever, the Italian stuff has most of what I was going to do anyway. I added a little pepper, paprika, and some cayenne pepper. Next time I'll do more cayenne, I want a spicy chicken sandwich. Then i just mixed an egg with a little milk, dipped the chicken in that and then into the bread crumbs, and then into a pan with an inch or two of hot oil. They cook up pretty fast, only a couple minutes per side.

We had some thinly sliced Italian bread which was long and narrow like the tenders, so they were perfect for making sandwiches. Then just pile on whatever you want to make a chicken sandwich and chow down. Like i said, the picke juice helped keep them juicy and gave a nice pickley flavor.

Just gonna copy and paste this from my FB post because fuck retyping.

One of my go-to dishes at any Chinese place is moo goo gai pan, aka sliced chicken and mushrooms. Also pea pods but how unruly do you want the name of the dish to be? Anyway, we had chicken, mushrooms, and pea pods so I wanted to make it. I've made it a couple times in the past but it never turned out quite right. The chicken would dry out and become tough. It was still good, but I knew I could do it better.

So off to the internet I went looking for answers. I eventually found out about a technique called "velveting". Basically you take an egg white, a little corn starch, and some dry sherry (if you have it, which I never seem to), mix it up and then marinate your thinly sliced chicken in this mixture for a half hour. Then there are two ways to prepare it using either oil or water. Oil you just put an inch or two in your pan and give them a quick fry, but then you need to use the chicken in a dish right away. I did the water method which you can do ahead of time and refrigerate for use later or even freeze. Boil some water, add a tablespoon of oil to it (no idea what that actually does but every article on the technique says to so I went with it), and then drop in your chicken. It cooks really fast, like a minute tops. When it's turned white you drain it and you have yourself some velveted chicken.

The rest of the dish was just a matter of stir frying the pea pods and mushrooms, added a little bamboo shoots and water chestnuts, then tossing in the chicken. Sauce was a some chicken broth and oyster sauce with a touch of corn starch to thicken. And you know what, it turned out great! The chicken had that Chinese takeout texture to it that I was looking for. The only thing I would do differently is making more sauce than I did. I wanted it to soak into my rice....mmmmm. Made a huge pan but I don't think there will be much for leftovers.
