Yum! I got in the mood to try smoking meats, and we had this old smoker we hadn't used in like...ever. Fish was supposed to be easy to do, so we got some catfish chunks for cheap and gave it a whirl. Soaked em overnight in a brine solution (mostly just water, salt, some soy sauce and brown sugar) and today fired up the smoker. Its an electric one so was easy to do, though I want to try charcoal sometime. We had a small bag of hickory wood chips that I soaked and used.
Anyway, they turned out pretty awesome. The lower rack went a little too far, though, so they are kinda crispy. Like bacon. The top rack tastes almost like a really good ham. So next time I'll do something else on the lower rack, something that takes longer to cook. We also had an apple tree fall down that I can cut up and chip since apple wood is supposed to be great for smoking.
Ultimately I want to make smoked ribs. My aunt makes some and they are totally awesome.
